APAS was founded in 2006 as a collective of smallholder farmers determined to protect what industrial coffee production had erased: origin, traceability, and fair compensation for producers. They were Fairtrade pioneers in Brazil and remain part of the fewer than 2% of global coffee production classified as specialty grade.\u003c\/p\u003e \u003cp\u003ePerfumer Antoine Lie collaborated with Julien Galéa, founder of Swiss specialty roasters Kojo, to begin a long selection process across different origins and varieties, searching for a precise, elegant aromatic profile that Julien would describe in the cup as a \"Grand Classique.\" Antoine's preference landed on the APAS farms: Mondo Novo and Catuai varieties with a character of dark chocolate, roasted hazelnut, yellow fruits and fresh florals. Julien and his team then proposed several roasting profiles, each revealing a different facet of this exceptional bean. The roasted coffee then underwent weeks of ultrasound extraction in the Les Indémodables R\u0026amp;D laboratory, a painstaking process to draw out the complete aromatic depth, creating a Grand Cru labelled coffee extract used at 6% concentration in Café Arabesque.\u003c\/p\u003e \u003cp\u003eThe opening is a bold ristretto rendered in scent: woody, aromatic, bright with a snap of liquorice. Café Arabesque then unfolds laterally into a creamy mochaccino accord, softening with cocoa powder and lightly roasted hazelnut. Benzoin \"large tears\" resinoid from Laos and New Caledonian Sandalwood Album oil build a warm, resinous, deeply sensual drydown that refuses to let go.\u003c\/p\u003e \u003cp\u003eCafé Arabesque returns coffee to its luxury origins.
