Kinmen kaoliang is Taiwan's most celebrated spirit, distilled from sorghum, an ancient cereal grain that General Hu Lien encouraged Kinmen's farmers to cultivate during the Chinese Civil War when importing alcohol from Taiwan proved too costly. The Kinmen distillery was built into underground tunnels originally dug to shelter from bombardment. What began as a military solution became a cultural institution, with kaoliang now consumed across Taiwan at a rate of over 45,000 litres a day.\u003c\/p\u003e \u003cp\u003eDistilled Heat carries the fire of that spirit. Perfumer Kaiwei opens with the dry, grain-forward heat of sorghum, the first burn of kaoliang on the throat.
